No Bake Mango Cheesecake

Slice 3 ripe mangoes

And put in a blender for about a minute until you have a smooth mango puree

Now 1 tbsp unflavor gelatine powder combine with 2 tbsp warm water and stir until nicely combine then add gelatine to mango puree and also add 2 tsp sugar and stir together again until nicely combine.

After that pure 1 cup crushed graham crackers in a bowl and adds 3 tbsp brown sugar and 4 tbsp melted butter and stir and mix together until our sandy mixture forms. Pure sandy mixture into two 5 ½ inch spring form pans and spread it and fix it with the back of your spoon.

Now 1 pack (8 oz) cream cheese and combile with ¾ cup confectioners sugar and ¾ tsp vanilla extract beat by a whisk until nice and creamy.

And in a separate bowl add 200 ml whipping cream and beat with a whisk on high speed for just 2 minutes not over mixes otherwise it become watery. And now add the cream cheese mixture and the whipped cream and fold the mix together with a spatula until smooth.

Now spoon the mixture over the sandy crushed graham crachers (fill the spring form pan until ¾ full) then pure mango puree over the top of cream cheese.

And finally slice 1 ripe mango into strips for topping and chill in the fridge overnight
