How To Make Hot Cross Buns

you will need the following ingredients to serve 6 people

two tsp dray yeast

120 ml warm milk

1 egg

15g butter at room temperature

pinch of salt

45g sugar

240 g flour

70 g dry currants or sultano

a pinch of cinnamon

a pinch of allspice

1 egg mixed with 2tbsp water

some extra flour

you will alos need;

mixer with flat beater, bowl lightly oiled, baking tray lined with parchment or baking paper, knife, spoon, tea towel, brush

Begin the dough:

add milk, yeast, butter, egg , sugar, flour, cinnamon, allspice, salt and currants into the mixer and mix it together until just combined

sprinkle with flour and remove bowl from mixer then continuer the dough

dust work space with flour then remove dough from bowl, if it seems too stickly, add more flour kneed until it has elastic consistency

shape into ball and put in bowl the cover with a towel and let rise until doubled in size

make into buns; sprinkle flour over dough and punch air out and then remover from bowl

place itonto your work surface and shape itno log then cut into 6 pieces

take one piece and shape into ball by folding dough inward then roll with palm of hand, roll all remaining pieces

place on baking tray cover them once more with the towel and let rise 30 minuts , preheat the oven set to 170 C /gas mark 3

wash and bake;

brush with egg wash then using a knif cut a deepcross into center of each bun

place them in oven and bake for 15 minutes 

remove from overn and serve
